Ingredients... (Makes 30)
2 tablespoons of RED food coloring
30 blanched Almonds
2 large eggs
1/4 teaspoon pure vanilla extract
1 stick unsalted butter @ room temperature
1/2 cup confectioner's sugar
5 tablespoons granulated sugar
Pinch of salt
1 2/3 cups all purpose flour
Heat oven to 350 degrees and line 2 baking sheets with baking mats OR parchment paper
Place food coloring in a shallow bowl, and using a paintbrush, brush the food coloring on each almond, set aside to dry
Separate one egg. Put aside the white. Whisk together the remaining yolk and egg in addition to vanilla and set aside.
Using an electric mixer combine the confectioners sugar, butter, granulated sugar and salt. Add egg mixture and beat for approx. 2 minutes OR until SMOOTH.
ADD the flour and mix on low speed until combined. Place dough on sheet of plastic wrap and place in the fridge for 30 minutes until dough is firm.
Divide dough in half. Place other half back in fridge to keep chilled. Divide the first half into 15 pieces. On a lightly floured surface, roll each piece back and forth until a finger shape forms (approx 3-4 inches) pinch dough in 2 places to form knuckles. Score each knuckle slightly with the back of a knife. Transfer to baking sheet and repeat with remaining dough.
When all fingers are formed. Brush lightly with remaining egg white and attach almond finger tips.
Bake approx 12 minutes.
